Our table also boasts a creative vernacular flavour with chefs conjuring up delicacies inspired by the local food idiom.

Pazham Puzhungiyathu (Boiled plantains) – a traditional delicacy from Kerala.

Ingredients:

1. Kerala Banana Ripe – 200 gms
2.Cloves – 4 Nos.

Method:

1.Take Ripe Kerala Banana with Skin and Cut 1.5-inch pitches
2.Leave the skin on.
3.Fill the steamer with 2-3 cups of water and allow it to boil, add Cloves.
4.Place the cut Banana pieces in a steamer tray.
5.Cover the lid of the steamer and Steam the Bananas on a high flame for 5 minutes.
6.Lower the flame and cook another 5 -6 minutes or until the banana turns soft.
7.Remove the steamed bananas from the steamer & allow them to cool.
8.Serve hot with Ghee & Sugar.
